Hot Cider Recipe for a Traditional Christmas


Wassail History (Traditional Hot Cider)

Wassail is something I've recently learned a ton about during my studies here at Georgetown College. Wassailing, or the act of sinsongs aroundround town is where caroling started. The official definition of wassailing is "a salutation wishing health to a person, used in England in early times when 
presenting a cup of drink or when drinking to the person. Or, a song sung when wassailing."

The Wassailing song lyrics are as follows: 
"Here we come a-wassailing
Among the leaves so green;
Here we come a-wand'ring
So fair to be seen.

REFRAIN:
Love and joy come to you,
And to you your wassail too;
And God bless you and send you a Happy New Year
And God send you a Happy New Year.

Our wassail cup is made
Of the rosemary tree,
And so is your beer
Of the best barley.

REFRAIN

We are not daily beggars
That beg from door to door;
But we are neighbours' children,
Whom you have seen before.

REFRAIN

Call up the butler of this house,
Put on his golden ring.
Let him bring us up a glass of beer,
And better we shall sing.

REFRAIN

We have got a little purse
Of stretching leather skin;
We want a little of your money
To line it well within.

REFRAIN

Bring us out a table
And spread it with a cloth;
Bring us out a mouldy cheese,
And some of your Christmas loaf.

Wassail Recipe 

Ingredients: 

  1. 1 gallon apple cider
  2. 4 cups of orange juice
  3. 4 hibiscus tea bags
  4. 10 cinnamon sticks
  5. 1 inch piece of ginger, cut into slices
  6. 1 apple, sliced into rounds
  7. 1 orange, sliced into rounds
  8. 1 tablespoon of juniper berries
  9. slow cooker
  10. lid for slow cooker

Directions:

  1. Put all of the ingredients into the slow cooker together and cover. 
  2. Cook on high heat for 3-4 hours. Serve hot after removing the tea bags. The fruit should be cooked.
