Wassail History (Traditional Hot Cider) Wassail is something I've recently learned a ton about during my studies here at Georgetown College. Wassailing, or the act of sinsongs aroundround town is where caroling started. The official definition of wassailing is " a   salutation   wishing   health   to   a   person,   used   in  England   in   early   times   when   presenting   a   cup   of  drink   or   when   drinking   to   the   person. Or, a song sung when wassailing." The Wassailing song lyrics are as follows:  " Here we come a-wassailing Among the leaves so green; Here we come a-wand'ring So fair to be seen.
