If there is one thing I truly love, it is a gooey brownie. I absolutely love brownies and I’ve been on the hunt to find the perfect vegan brownie recipe. When I couldn’t find one I loved I decided to create my own. Brownies are one of my favorite desserts to enjoy. I like to top it with powdered sugar or vegan ice cream and whipped topping. I am not really a fan of hard or crunchy brownies. No, I love a nice and soft brownie. One that, when warm, almost melts into the ice cream. Great, now I’m hungry. Brownies are actually quite easy to make and to veganize. A lot of vegan bloggers, YouTubers and recipe websites have them. Switching up your Breakfast Routine

Breakfast is such an important meal for getting your first boost of energy for the day, but some people struggle with getting healthy food in. I have been trying to switch my breakfasts up more often lately and have been trying a lot of new things. I have been trying to incorporate a lot of fruit into breakfast for essential vitamins in my diet like vitamin C, D, E, and K. Another thing I have noticed since switching my diet and lifestyle is that I have been so much so productive in my day and have not been getting tired. I have not needed as much coffee and I really only drink a little because I personally like the taste. Hey guys! Today I wanted to share a super fun fall recipe I have recently discovered. Food is a major part of how my family spends time together. Every night, we eat dinner at the dining room table together. On some days it is the only time we are all together. I am lucky to have a family that is very supportive of my diet choices, but a month ago my Step Mom was diagnosed with diabetes so meals became a bit harder. We still ate meals together but sometimes we may be eating completely different things because of our diet differences. Happy Tuesday everyone! Today, I am veering away from food and decided to do a little recipe I found while I was on vacation. Every year, I go to the Outer Banks for my time share. And about the half way point, we stop at this Farmer's Market called Morris Farm (Which is AMAZING). So while I was there, they had a pumpkin milk shake. Which had 2 simple ingredients. Pumpkin butter, and ice cream. And I lie to you not, it tasted just like a pumpkin pie. So I am going to write down this recipe, but with vegan ice cream! Making vegan ice cream can be complicated, or simple depending on which recipe you use. I am using a simple recipe that only has 3 ingredients, and it does not require an ice cream machine! No, it does not, but the word expresses how I feel about raw purple potatoes and is indicative of the yumminess I experience whilst having it. Here is one really simple way to enjoy raw purple potatoes, which by the way, reminds me of cooked sweet potato as far as flavor goes. I made a snack out of this recipe and added my favorite greens, Purslane and some of my green sweet and tart sauce. I hope you give this dish a try. I started experimenting with them some years ago after being introduced to them by a local herbalist. The fiber content is pretty high. Below is a recipe for a porridge I make with them often. - Jan P. López Easy Raw Peanut Banana Porridge Makes 1 serving Ingredients 1 Cup  Raw peanut skin 1/2 Teaspoon Raw Apple Cider Vinegar 2 Cups Fresh Ripe Gros Michel Bananas ½- 1 Cup Chopped Fresh fruit ½ Cup pure water 1 Teaspoon Cayenne Pepper – Optional. Directions Blend water, peanut skin, a cup of bananas, and cayenne to desired consistency.
