Here is one really simple way to enjoy raw purple potatoes, which by the way, reminds me of cooked sweet potato as far as flavor goes. Hi guys! Today I am going to share with you a brand spanking new recipe! The idea for this recipe hit me in the middle of the night. When I was growing up, one of my favorites was a chicken parmesan sandwich. Recently I have had a craving for something similar. I tried to find a cruelty free version, but I could not find one that was just right. What a better way to solve this problem than to create a recipe of my own! When I started creating this recipe, I wanted something that did not have super thick batter and that did not require me to have to buy a whole bunch of abnormal things. This recipe's ingredients are all things that I keep in my kitchen! The produce used in this can simply be grown in a garden. A few tips to help you make this recipe the best it can be! Raw Vegan Stir Fry *From Jan’s Raw Kitchen Kreations* Ingredients Servings:  2-3. 1 Cup Button or Shitake Mushrooms chopped in ¼ inch sizes 1 Cup sun-dried tomatoes soaked overnight 1 Tablespoon Apple Cider Vinegar (raw) - ACV 1 Teaspoon Cayenne Pepper 1 Tablespoon Himalayan Salt. Directions Sprinkle salt over mushrooms in a bowl, mix in well ensuring each piece is covered Mix well the ACV and Cayenne pepper Blend cayenne & ACV in with soaked sundried tomatoes until sauce consistency. Pour over chopped mushrooms and mix in well, ensuring each piece is covered. Set mushroom mix to marinade for 8 - 12 or more hours. Serve with fresh greens and enjoy! Jan P. López

Easy Raw Vegan Low Fat Guacamole Recipe *From Jan’s Raw Kitchen Kreations* Ingredients Serves 2-3 persons. 2 Cups chopped( 1/4" sizes) zuchini 2- 4 crushed cloves of garlic 1 medium sized avocado chopped. Or 1/2 cup of raw ackee ( my preference) 1/4 cup chopped green onions 1/8 cup cherry tomatoes 1 teaspoon spirulina Directions In a food processor, process zucchini with green onions, tomatoes, spirulina and avocado/ackee until smooth. Hey guys! With tomorrow being the 4th of July I thought it would be super awesome to share a Vegan Black Bean Burger recipe! This will be something you can make and enjoy at a summer barbecue.  The easy vegan recipe can be prepared the night before and then you can cook it a few minutes before you want to eat it. This is my favorite recipe for barbecues. I ask whoever is on the grill to grill it up before the meat or after (make sure they know to clean the grill and use new utensils). In my experience, most people are happy to do that if you let them know in advance. If they do not want to do that then you can bake them inside. Either way, they are delicious! Hey guys! I hope you guys are having a wonderful week. This week I have been out of town visiting family and friends. One of the things I have struggled with is making sure I have time to spend with my family and having time to prepare my vegan food. I am the only vegan here so often I am preparing my meal while everyone else's meal is being prepared. It is important that the food I make while here is easy and healthy. This Easy Vegan Cucumber, Avocado and Tomato Salad has been a saving grace because I am able to make it ahead of time and it goes with pretty much anything else I am having. It can be eaten on its own, on top of a bed of lettuce, as a sandwich filling or on crackers. My personal favorite is to eat it with carrots after a long hike or a day at the beach. Process finely in a food processor in to rice sized pieces. 2.        Unparched Turmeric - 1 Tablespoon 3.       Unparched pimento - 3/4 Teaspoon 4.       1 finely chopped medium sized Brandy wine tomato 5.        1. Hi guys! I am sorry I have been missing in action lately. We are preparing to move in the next few weeks and it has me going a bit crazy!  During these busy and stressful times, I have found it necessary to find something easy to make. Because I am a Vegan ordering in isn't always an option and it is not the best for you.  I have found that chili is an awesome thing to make. It takes awhile to cook, but it is passive time. I can go and do other things, I do not need to sit over it the whole time. I have had this on it's own, over rice and over baked potatoes. All three are equally as delicious.  I also really enjoy topping it with avocado, it adds a certain creaminess I am used to having with my chili. In my "pre-vegan" days I would just add sour cream, avocado has the same effect without using dairy! Good morning, good afternoon, good evening! Today I wanted to share a vegan zucchini bread recipe with you. Zucchini bread is one of my Mothers favorite and we always had it this time of year. It is one of my holiday favorites. Since I am phasing eggs out of my diet, I thought it would be super fun to experiment with vegan zucchini bread recipes. I tried on with a flax seed "egg" and one with bananas. The banana one was voted the better out of the two in my house. My husband absolutely loves banana bread so he also really enjoyed this bread. It is almost like a combination of banana bread and zucchini bread and taste absolute heaven. You can not even tell it is vegan, which makes a perfect dish to share with others. For this recipe, I used a circle baking dish because I have misplaced my bread baking dish. This recipe works in pretty much any size baking dish you have! Hello everyone! We are going to wrap up this holiday recipe series with a traditional mash potato and gravy recipe. The issue with most gravy recipes is that they are almost always made with a meat broth or stock. I have found that this recipe is the best vegan friendly one I have come up with. The mushrooms give this recipe a “meaty” texture. I find that without adding some type of mushroom to it, the recipe is lacking flavor and texture. With this recipe, I encourage you to play around with it. Try it with garlic or onions. Pretty much every gravy recipe is the same at its core. Butter, flour, stock/broth.
