How to Host an Awesome Vegan Brunch



            Honestly, who doesn’t love a great brunch with friends? Having a brunch event at home can be a better way to save money and feel cozier than going out. I’ve thrown together some great brunch recipes and ideas so you can host your own brunch and invite your friends over to enjoy! These recipes are all delicious so you can show your friends how tasty vegan food is. As always, feel free to modify anything to make it specific to your taste buds and get creative.

Jelly Rolls
1 package of crescent rolls (Most are vegan, I used Pillsbury)
16 Tablespoons of Jam (2 tbs for each roll, I used Crofters)
Optional: vegan butter

First, preheat oven to 350 degrees F. Then unroll the dough and separate into 8 triangles or as instructed by your roll’s directions. Spread in approximately 2 tablespoons of jam into the center of each triangle. Roll up the dough into crescent rolls. Place them on ungreased cookie sheet and curve each into crescent shape. Finally, Bake for 12 to 15 minutes or until deep golden brown. Optional: spread on some vegan butter such as Earth Balance! While this is baking, you can prep the veggies for the tofu scramble or slice the fruit for the fruit bowl.


Tofu Scramble
Ingredients:
1 sweet or white onion
1 bell pepper (any color)
any other veggies of choice (broccoli, spinach)
2 packages of firm or extra firm tofu
½ tablespoon turmeric
½ tablespoon cumin
½ tablespoon garlic powder
salt and pepper to taste

            For the tofu scramble, start by adding some water or oil into a pan. Dice up the onion and bell pepper until soft and fragrant (about 4 minutes). Add in any other vegetables you desire and wait until they are cooked. Next, crumble in your tofu. Use your spatula to break it into small pieces (like scrambled eggs). Sprinkle in the turmeric, cumin, and garlic powder. Feel free to add more or less of each according to your taste. Add in salt and pepper. I personally like a lot of salt and pepper because it really brings out the scrambled-egg-y taste. Once everything is warm and mixed together, remove from heat and serve as desired. You can add hot sauce, ketchup, or whatever you would normally add to scrambled eggs.
           


Fruit Bowl
Ingredients:
Anything fruits you want! Here are my recommendations:
Blackberries, sliced kiwi, sliced strawberries, blueberries, sliced bananas, cubed pineapple, cubed watermelon, grapes, cubed cantaloupe, etc.
            All you need to do is cut up the fruit and throw it in a large bowl. Mix it around so the bowl looks nice and colorful.


            For the drinks, I am definitely a coffee fan. There are many great vegan creamers on the market right now and there are so many flavors. Lately I’ve been using the Silk brand which is amazing. Some other good vegan brands are So Delicious and Califia so I recommend checking them out.


            Another good breakfast drink is the classic orange juice. Grab a fresh jug of that to serve your brunch guests! Lastly, if you want to get fancy, turn it into a mimosa by pouring some Champagne into your orange juice.
