Eating Healthy Meals at Chain Restaurants (Part 1)

(photos by Danielle) A lot of people feel like transitioning to a healthier lifestyle will make it more difficult to be in situations like eating out. Going on to eat does not have to be difficult and there are so many articles and youtube videos showing you how to eat healthier/vegan/vegetarian when going to chain restaurants, even when there are not a lot of options. For a while, when I was going out to eat I was eating plant based at home, but struggled to stay that way when I went out. However, this does not have to be the case. You can still go out with friends and family and join in while still staying true to your morals and personal health goals.  I will be naming some restaurants that I frequently go to and also tell you what I got along with some pictures. Over the holidays, people struggle with many things. One of them being staying healthy with so much buffet style food at gatherings. Other people may deal with challenges as well. For myself, I sometimes take for granted having such a supportive family when others do not. I want to extend my love and positivity to those who need that, especially over the time of the holidays. A lot of people in my family know that the choices I am making are helping and have reversed what I was dealing with health wise. I feel amazing now and the other people in my life notice how much better they feel when they try my cooking. I do not mind sharing because I am so open to showing people anything if they have any questions and I love helping others. I also love hearing about how much better people feel when they tell me they try a recipe or food that I have recommended. Hi everyone! I came up with this recipe on a whim. I don't know about you all, but I absolutely adore squash! I think butternut squash is one of the absolute best. It's savory, sweet, has a wonderful depth of flavor, and is so versatile! You can do so much with it, and can take it in so many culinary directions.  Now, I am a "spoonie." If you don't know what that is, please feel free to search for "the spoon theory." What it basically comes down to is having a chronic illness. As a result, any cooking I do is usually in big batches, so I have leftovers to eat for a few days. Also, I try to make the prep as simple as possible, and not use an extensive list of ingredients. Recipe!! Avocado Pasta Salad

I am not a really big sports fan, however, I always look forward to Super Bowl Sunday! This is not because of the big game or the funny commercial.  No, it is because right before Super Bowl Sunday avocados and tomatoes go on sale! Avocado and tomato are the two main ingredients for this delicious pasta salad. Growing up, I used to love my Mothers Pasta Salad. Since I transitioned to a plant based diet I have had a hard time finding substitutes for the mayonnaise. I tried vegan mayonnaise and hated it! I do not the chemical taste of miracle whip so I was left in a bind. One day I decided to try masking it using avocados, I had seen other examples where people used it as a mayonnaise replacement and thought it was worth a shot/ Boy was I right! Recipe!! Vegan Tomato Sauce & Pasta With Sauteed Mushrooms

Hello, everyone! I was sitting in my kitchen the other day and thinking if I could share just one recipe, what would it be? I chose this one because it is so easy and flexible! I make this meal in around 10 minutes and it tastes absolutely wonderful! It is flexible because you can use any vegetable in it. For example, if you do not have mushrooms but you have green beans, you can use those instead! This is your standard tomato sauce recipe, it is very light but flavorful. You can add depth to it by your seasoning choices. In this recipe, I used Italian seasonings. I could have added cumin and chili powder to have more of a Mexican flavor.
