Recipe!! Vegan Eggplant Parmesan

Hello everyone! It's another wonderful day! What I have prepared today is eggplant parmesan. Which is wonderful just as a heads up. I am not a fan of eggplant, but I do enjoy it in this dish. There are minimum modifications to do to this recipe to make it vegan. So instead of using the typical egg wash for the recipe to bread the eggplant, we are going to use an almond milk mixture. And of course, vegan cheese for the recipe. Enjoy! -Maranda Ingredients 1 medium eggplant  1/4 cup unbleached all-purpose flour 1 cup panko bread crumbs  2 Tbsp vegan parmesan+ more for serving 1 tsp dried oregano 1/4 tsp salt 1/2 cup unsweetened plain almond milk 1 tsp cornstarch Pasta Marinara Sauce Directions: Slice eggplant into thin rounds slightly less than 1/2 inch thick, and sprinkle each side liberally with salt. Today's recipe is going to be a twist on a childhood favorite of mine. Growing up, my best friends Mom would make these AMAZING grits! They were so rich, creamy and delicious. The only down side was that they were not vegan. They had cheese and heavy cream in it, many times it was served with eggs and shrimp. So this definitely did not fit into my new lifestyle.  After a few months, I was really craving these extra special grits. So I decided to play around with this recipe. I tried replacing all of the ingredients with the vegan alternatives, and it just didn't do it for me. At that point, I knew that I was to have to recreate this recipe. I started playing around with different flavors and combinations. I actually came across this combination of ingredients completely on accident. Seitan Ribs has become one of my favorite Vegan Barbeque Recipes! It is a very easy recipe to make and it is very delicious. I love this recipe is my favorite because it can be grilled, baked or finished up on a griddle. Not only are these super easy to make but they are kid and family friendly. These will not fool a meat eater, but I have shared them with my meat eating friends and family on a few different occasions and it always gets a great review. I made these for a family BBQ and asked my Father to grill them with the veggies, to avoid cross contamination with the animal products. It is not very often that I get to sit down with my family and enjoy a meal that is similar to the one they are eating. This recipe allows me to do just that! Easy Raw Vegan Low Fat Guacamole Recipe *From Jan’s Raw Kitchen Kreations* Ingredients Serves 2-3 persons. 2 Cups chopped( 1/4" sizes) zuchini 2- 4 crushed cloves of garlic 1 medium sized avocado chopped. Or 1/2 cup of raw ackee ( my preference) 1/4 cup chopped green onions 1/8 cup cherry tomatoes 1 teaspoon spirulina Directions In a food processor, process zucchini with green onions, tomatoes, spirulina and avocado/ackee until smooth. Easy Raw Vegan Broccoli, Mushroom Salad *From Jan's Raw Kitchen Kreations* Ingredients Serves 2-3 4 Cups Broccoli chopped into bite sized pieces 4 Cups White Button mushroom 1 Cup Cherry tomatoes Place all ingredients in one bowl Sauce 3 pitted dates soaked overnight 1 teaspoon raw apple cider vinegar 3/4 -1 Cup tahini 1 teaspoon cayenne 4 cloves garlic minced  Combine all sauce  ingredients in a food processor,  Process until smooth. Vegan Black Bean Burger Recipe

Hey guys! With tomorrow being the 4th of July I thought it would be super awesome to share a Vegan Black Bean Burger recipe! This will be something you can make and enjoy at a summer barbecue.  The easy vegan recipe can be prepared the night before and then you can cook it a few minutes before you want to eat it. This is my favorite recipe for barbecues. I ask whoever is on the grill to grill it up before the meat or after (make sure they know to clean the grill and use new utensils). In my experience, most people are happy to do that if you let them know in advance. If they do not want to do that then you can bake them inside. Either way, they are delicious!
