Tropical Pineapple Salad Recipe
Happy Tuesday and Happy 4th of July everyone! I hope everyone had a wonderful weekend. Today, this is just a really simple recipe. The Tropical Pineapple Salad is very refreshing and it will be great for the summer! The only item I will be omitting from this recipe is honey. But it will taste delicious without it. Enjoy!!!

Ingredients:
- 1 package romaine lettuce
- 1 cup chopped pineapple
- 1 can mandarin oranges
- ½ cup chopped macadamia nuts, toasted
- ⅓ cup flaked coconut, toasted
- 2-3 green onions
- 1 red bell pepper
Dressing:
- ⅓ cup pineapple juice
- 2 Tbsp olive oil
- 2 Tbsp red wine vinegar
- 2 Tbsp vegan sugar
Ingredients:
- Chop romaine into small pieces
- Add pineapple and mandarin oranges to the lettuce
- Lightly toast macadamia nuts and coconut, add to salad
- Finely chop green onions and bell pepper, add to salad
- Combine all the dressing ingredients in a mason jar, seal, and shake well to combine
- Pour dressing onto the salad and enjoy!
