There are a few options besides fast food that you have for during a flare or are too tired, when you're not up to cooking, or not up for cooking a lot. These are the tips I've figured out over the years: Meal prep, and cook in batches. At the beginning of your week, meal prep your food (or the middle, depending on your schedule, and whether you work or not). Or make a large batch of a dish, or a few dishes. Things like soup, chili, and pasta all keep and reheat well. There are practically endless options online, especially on apps/sites like pinterest . Plenty of other suggestions  here . It's really helpful for me to cook in large batches and have leftovers in the fridge or freezer to reheat. Your circumstances may be slightly different, and you may find it more desirable to cook smaller amounts more frequently. Just do whatever you prefer. Have items on hand to make food prep and storage easier. Such as food processor or mini-chopper; blender; rice cooke...

Hi everyone! Happy of Happiest New Year to you all! I have mentioned prior posts that I am a "Spoonie" If you aren't familiar with this term, please do a quick search for "The Spoon Theory". I wanted to give some tips to other Spoonies who are, or are considering being vegan. A lot of people think veganism is challenging. Especially those with chronic illness, they may think it's damn near impossible. I have many, many chronic illnesses, both physical and mental. I truly believe that if I'm able to make this lifestyle work, anyone can. It can be overwhelming at first, but you may find it easier to switch to vegetarian first, then choosing a date shortly after to go completely vegan. I prefer not recommending vegetarianism, as it's still contributing to animal cruelty, and I'm aware now of just how cruel all  aspects of animal agriculture are.. However, it's a decrease in animal consumption, and eventually switching to veganism...

Quick & Easy Vegan Oven Baked Pizza Grilled Cheese.

Hi Everyone. I hope November is faring well for all of you, and Happy Thanksgiving! This is another spur of the moment recipe. It came together super quick, and is another very "spoonie-friendly" recipe. It also would be great for those nights where you just don't want to stand at the stove for forever. This would be a great recipe for your kids to get involved in, too!  This would go well with salad, soup, or with some roasted vegetables, or some other side dish that you cook in the oven. You could start your other food, and then add the grilled cheeses to the oven during the last bit of cooking. These sandwiches turn out super well in the oven! The bread has such a light and fluffy inner texture; compared to the "traditional" way of making a grilled cheese. Meanwhile, the outside has the typical crispy and savory deliciousness.  It's a twist on pizza, and instead of the sauce being incorporated in the sandwich, you dip pieces of it into the...
