Recipe!! Holiday Addition: Mashed Potatoes With Mushroom Gravy

Hello everyone! We are going to wrap up this holiday recipe series with a traditional mash potato and gravy recipe. The issue with most gravy recipes is that they are almost always made with a meat broth or stock. I have found that this recipe is the best vegan friendly one I have come up with. The mushrooms give this recipe a “meaty” texture. I find that without adding some type of mushroom to it, the recipe is lacking flavor and texture. With this recipe, I encourage you to play around with it. Try it with garlic or onions. Pretty much every gravy recipe is the same at its core. Butter, flour, stock/broth. Hey guys! It’s time for another holiday recipe. For me, cranberry sauce has always been a staple in my holiday dinner. My Mother used to buy a much of the canned jelly cranberry sauce and she would always have it on the table as part of our holiday meal. For the longest time, I thought that this was the only way to have cranberry sauce. One year I decided to make cranberry muffins and this was the first time I had ever dealt with “real” cranberries. I learned how to do different things with cranberries in culinary school, but they did not make a big comeback in my life until a few years ago. My Step-Mother's Mother (Step-Grandmother?) makes the best cranberry sauce! Hers is great because it is not over sweet and complements everything else served at the meal. Hey guys! I wanted to take a moment to apologize for the lack of recipe posts last week. We had a lot going on all at the same time, I am sure most of you can relate! The other night I was talking to on of our writers, Dahlia, about the groceries I had just purchased. One of the things I had purchased on a whim was Brussel Sprouts. Hey guys! Today's recipe from me is a vegan take on the best part of Thanksgiving; Sweet Potato Casserole! Vegans can not eat your traditional casserole because there is usually egg in the sweet potatoes and marshmallows are not vegan! Here is a delicious cruelty-free option you can bring instead. There is not much sugar in this dish because I really wanted to concentrate on all of the natural flavors of this dish. If you would like to add more sugar, why not? It is the Holidays after all! Hey guys! As I am sure you guys all know it is almost time for the holidays. As a vegetarian, the Holidays can be particularly stressful. Over the next few months, we are going to work to bring you guys awesome recipes for the holidays that even the pickiest meat eaters will love! These dishes are going to be beautiful, delicious, full of nutrients and most importantly meat free! This stuffed butternut squash is a perfect replacement for your typical stuffing. If you do not have, or do not like quinoa you can replace it with brown rice. Also, this recipe is for two people but if you want to bring it to a family function you can use the entire squash, all you need to do is scoop out most of the flesh after roasting, just be sure to leave at least half an inch of flesh around the edge and you will need to reseason the part where you scooped out the flesh.  Now, let's talk about all of the awesome nutrients and vitamins this recipe is chalked full of!
