Live Well on a Budget!

Hi All, Happy Monday! The topic of my discussion today focuses around words. What I mean by that is, depending on the words you use to describe something, someone will automatically get the impression whether it is good, bad, cheap, expensive, old or new just to name a few things. First let's talk about food. Meal kits, meal starters, one skillet meals have a nice ring to them but when you look up the word leftovers there is nothing appealing about. If you look up synonyms for the word leftovers you can find words like scraps, remnants and crumbs so who would want to eat that? Maybe we need to change the way we think of leftovers. Personally I love it when I have food leftover because that automatically becomes my "meal kit" that I can use as the basis for a new dish. Yes. you can just reheat your original meal but that can be boring. However if you add some ingredients and change the flavor profile by adding some spices, you have not only saved money but c...

Hey guys! Today I am going to share a stuffed mushroom recipe! This one literally came to me in the middle of the grocery store. I saw these portobello mushrooms on manager special and that was all she wrote! This is my version of a stuffed mushroom, the best thing about this recipes is that it is so flexible! another combination you could do is kale and roasted peppers. Recipes that are flexible depending on what is in the fridge are the best in my opinion! I mean, how many times do you find an awesome looking recipe on Pinterest and then go to your pantry to discover that you do not everything you need? For me, it happens all of the time! This recipe can be done in the big portobello mushrooms or in 2 or 3 of the smaller ones, this is a perfect replacement for meat. Recipe!! Vegan Buffalo Sliders

Hey guys! Today I am going to share with you a delicious vegan alternative to a Chicken Buffalo Sandwich. My husband absolutely loves buffalo anything, the for him the best of the best is a Chicken Buffalo Sandwich. This is one of the things he has missed the most since we have transitioned to a plant-based diet. We really try to stay away from the frozen vegan food, or as I like to cal it "Vegan Junk Food" as much as possible. I find that it makes me feel heavy and bloated.  So, I used cauliflower instead of a processed alternative. If you want to make this as a regular sized sandwich rather than sliders, you can simply slice a head of cauliflower into 1/4-1/2 inch slices, for sliders, it is a bit more complicated. You will actually need to cut up a bit more to fit into the size of the bun you are using. Now, because we are working with cauliflower if we cut it the wrong way it will all fall apart! My solution to this is to cut it into triangles or in half...

Last night I had a dream that I was sitting on a cloud eating the fluffiest waffles with warm syrup. Let's just say I was disappointed when I woke up and found myself nibbling the side of my pillow. I decided first thing in the morning that for lunch I was going to have waffles. I was already to go, my mouth was practically watering at the idea. Then I looked in my refrigerator and saw that I was completely out of eggs. I let myself feel defeated and settled to make a smoothie when I got a brilliant idea. Fruit puree! The waffles came out amazing! They were soft, fluffy, and absolutely to die for! Hey Guys! Today I wanted to share a simple recipe for a stable food in my (and most vegans and vegetarians) diet! Smoothie bowls are really just a different way to make a smoothie. The main difference is the thickness of the blended fruit. To achieve this you simply just add less liquid. You can make this in a blender, but I make mine in a food processor. This recipe does not have any added sugar in it. I make it sweet by using very ripe fruit. I feel that adding sugar gets in the ay of enjoying the taste of the fruit the way it was meant to taste.  This makes a perfect breakfast, lunch or snack! It is full of fresh, healthy ingredients that will leave you feeling energized and it will keep you full. Smoothie bowls are super flexible and you can use anything you have on hand in your kitchen! How To Survive Going Out To Eat With Your Family As A Vegetarian

Okay guys, let's talk about our families for a moment here. If you have been a vegetarian for any length of time you know that there are people who insist you are wrong for your choice not to eat meat. These are the people who stop you in the food line at functions and tell you how silly you are for not eating meat. They may call you a hippy or my personal favorite, ask you why you are eating the animals food if you care so much about them. So, these people are all up in your face about their opinions on your lifestyle. Then you have your, what I like to call, silent haters. Silent haters are the people who do not say they have an issue with your choices to your face. They may show their discontent by eye rolling when someone asks you a question about your vegetarian lifestyle. They may sigh when you say no thank you to a meat dish at a meal.
