Easter Sunday Dinner with My Family

Image
I cooked a lot for Easter with my family and we had a lot of different things at the table. Of course I got some Gardein, some Daiya cheesecake, and some snacks. I also made a pasta salad and I will be glad to share with you everything I put into my recipe and it was wonderful for my family. Everyone enjoyed everything that was there.  For snacks, we had crackers, Chao cheese, and grapes. I made a Gardein Turkey and it comes with gravy packages so that you do not have to buy extra. I love making the Gardein Turkey cutlets because they are so crispy and they taste amazing.  Also, at the table, we had some veggies like sweet potatoes and corn. We had dinner rolls that went great with everything we had as well. I had some mango pineapple juice that I also blended.  I made a pasta salad in the morning as well that was a hit. First I roasted some bell peppers in the oven and then got the skin off to have some roasted red pepper to shop up for this...

Valentines Day Foods (Cheesecake and Fudge!)

Image
(photos by Danielle) For Valentines Day, whether you are in a relationship or not, one thing we can all agree on is that we love food. These foods can be for anyone and are all amazing snacks or meals that I have had in the past and enjoyed! I am putting a plant based twist on my favorite snacks and they are still amazing. There are many products out there that you can buy and recipes you can make in order to feel festive this season. You can put a red or pink twist on any recipe, or even cut food into heart shapes. It is also a great opportunity to make a meal for your loved ones. This does not have to be a romantic partner...you can cook for the friends and family that you love to show your appreciation for their love.  If you want something home made that has the chocolate and strawberry theme I have one with a bagel and another made with a waffle. If you want to get festive you can shape the food into a heart and add whatever else you like.  (photos by...

Plant Based Holiday Dinner

Image
Over the holidays, people struggle with many things. One of them being staying healthy with so much buffet style food at gatherings. Other people may deal with challenges as well. For myself, I sometimes take for granted having such a supportive family when others do not. I want to extend my love and positivity to those who need that, especially over the time of the holidays. A lot of people in my family know that the choices I am making are helping and have reversed what I was dealing with health wise. I feel amazing now and the other people in my life notice how much better they feel when they try my cooking. I do not mind sharing because I am so open to showing people anything if they have any questions and I love helping others. I also love hearing about how much better people feel when they tell me they try a recipe or food that I have recommended. A lot of people in my family are open to trying these dishes even if they do not plan on making a transition to a vegan, veg...

Vegan Pumpkin Shake

Image
Happy Tuesday everyone! Today, I am veering away from food and decided to do a little recipe I found while I was on vacation. Every year, I go to the Outer Banks for my time share. And about the half way point, we stop at this Farmer's Market called Morris Farm (Which is AMAZING). So while I was there, they had a pumpkin milk shake. Which had 2 simple ingredients. Pumpkin butter, and ice cream. And I lie to you not, it tasted just like a pumpkin pie. So I am going to write down this recipe, but with vegan ice cream! Making vegan ice cream can be complicated, or simple depending on which recipe you use. I am using a simple recipe that only has 3 ingredients, and it does not require an ice cream machine! But you can always add whatever you'd like for your ice cream for other flavors! This is a very simple recipe that would be nice anytime! I went ahead and added a vegan ice cream recipe, but you can always use store bought if desired, or your own recipe! The pumpkin butte...
